Spinach & Goat Cheese Stuffed Chicken Breast Recipe

 

2-4 servings • 7-9 ingredients

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 cup fresh spinach leaves

  • 1/2 cup crumbled goat cheese

  • 1 cup tomato sauce

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Optional: chopped fresh basil or parsley for garnish

Directions

  • Preheat the oven to 375°F.

  • Butterfly each chicken breast by slicing horizontally through the middle, but not all the way through, to create a pocket.

  • In a skillet over medium heat, heat 1 tablespoon of olive oil. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach leaves to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove the skillet from heat and let the spinach cool slightly. Once cooled, mix in the crumbled goat cheese.

  • Stuff each chicken breast with the spinach and goat cheese mixture, then secure the openings with toothpicks.

  • Heat the remaining tablespoon of olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and sear them on both sides until golden brown, about 2-3 minutes per side.

  • Pour the tomato sauce over the chicken breasts in the pan. Transfer to pan the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F. Remove the pan from the oven and let the chicken rest for a few minutes before serving.

  • Garnish with chopped fresh basil or parsley, if desired, and serve hot with additional tomato sauce drizzled over the top.
