Soulful Chicken & Greens Bowl Recipe

Ingredients
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
6 cups mixed greens (collard greens, kale, or any green leafy veggies you have), chopped
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon dried thyme
Hot sauce, to taste (optional)
Cooked rice or quinoa, for serving
Directions
Season the chicken breasts with salt and black pepper on both sides.
Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until they are cooked through and no longer pink in the center. Remove from the skillet and set aside.
In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.
Add the chopped mixed greens to the skillet. Cook, stirring occasionally, until the greens are wilted and tender, about 5-6 minutes.
Stir in the apple cider vinegar, smoked paprika, and dried thyme. Season with additional salt and black pepper, if needed. Add hot sauce to taste, if desired.
Slice the cooked chicken breasts into strips.
To serve, divide the cooked rice or quinoa among serving bowls. Top with the cooked greens mixture and sliced chicken.
