Soulful Chicken & Greens Bowl Recipe

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper, to taste

  • 6 cups mixed greens (collard greens, kale, or any green leafy veggies you have), chopped

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • Hot sauce, to taste (optional)

  • Cooked rice or quinoa, for serving

Directions

  • Season the chicken breasts with salt and black pepper on both sides.

  • Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until they are cooked through and no longer pink in the center. Remove from the skillet and set aside.

  • In the same skillet, add the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3-4 minutes.

  • Add the chopped mixed greens to the skillet. Cook, stirring occasionally, until the greens are wilted and tender, about 5-6 minutes.

  • Stir in the apple cider vinegar, smoked paprika, and dried thyme. Season with additional salt and black pepper, if needed. Add hot sauce to taste, if desired.

  • Slice the cooked chicken breasts into strips.

  • To serve, divide the cooked rice or quinoa among serving bowls. Top with the cooked greens mixture and sliced chicken.
