“Summer Nights” (Overnight) Oats Recipe

Ingredients

  • 1 cup rolled oats

  • 1/2 cup blueberries

  • 1/2 cup cherries, pitted and halved

  • 1 cup milk (dairy or non dairy)

  • 1/2 cup greek yogurt (optional)

  • 2 tbsp honey or maple syrup

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

Directions

  • Prepare the Base:

    • In a medium sized bowl or mason jar, combine rolled oats, milk, greek yogurt (if using), honey ( or maple syrup), vanilla extract, cinnamon, and salt.

    • Stir well.

  • Add the fruit:

    • Gently fold the fresh blueberries and cherries.

  • Mix and Chill:

    • Mix everything together until well combined. Cover the bowl or jar with a lid or plastic wrap.

  • Refrigerate:

    • Place in the refrigerator overnight or for at least 4 hours to allow oats to soften and absorb liquid.

  • Serve:

    • In the morning, give the oats a good stir. You can enjoy them cold, straight from the fridge, or heat them up for a warm breakfast or snack!
